Taco Footballs

Prep: 15 minutes
Cook: 12 minutes • Serves: 4

1/2 pound 85% lean ground beef
1 package (1.2 ounces) taco seasoning
3/4 cup drained and rinsed black beans
1/2 cup Pace® medium restaurant style salsa
12 soft tortilla mini bowls
3/4 cup quartered grape tomatoes
1/2 cup shredded Mexican-style blend cheese
1/4 cup finely chopped red onion
1 tablespoon chopped fresh cilantro
1/4 cup sour cream

1.1. In large skillet, cook beef 8 minutes or until browned, breaking up beef with side of spoon. Stir in taco seasoning, beans, salsa and 1/2 cup water; cook 4 minutes or until liquid is absorbed, stirring occasionally. Makes about 2 cups.

2.Fill tortilla bowls with beef mixture, tomato, cheese, onion and cilantro. Transfer sour cream to small zip-top plastic bag; snip bottom corner with kitchen scissors. Pipe sour cream on top of tacos to create “football laces.”
