DIY Gift Jar: Gluten-Free Double Chocolate-Mint Cookies

Makes: 1 (32-ounce) gift jar

Gift Jar

8 wrapped plus 1 cup chopped Andes® crème de menthe thins
Small cellophane bag
1 quart (32-ounce) wide-mouth glass jar
2-1/2 cups almond flour
1/2 cup unsweetened cocoa powder
1/2 cup granulated sugar
3/4 teaspoon baking soda
3/4 teaspoon salt
1/2 cup packed light brown sugar
Index card
Festive ribbon
Festive bow (optional)

Recipe Card

1/2 cup unsalted butter (1 stick)
2 large eggs
1 teaspoon vanilla extract

1.Gift Jar: Place 8 crème de menthe thins in cellophane bag. Into glass jar, layer 1 cup chopped crème de menthe thins and remaining ingredients in the order listed, packing as necessary; seal jar.

2. Recipe Card: Write above Recipe Card ingredients and the following directions on an index card: Preheat oven to 350°; chop crème de menthe thins in cellophane bag. In large microwave-safe bowl, heat butter in microwave oven on high 1 minute or until melted, stirring every 30 seconds; whisk in eggs and vanilla extract. Add contents of jar; stir until dough is moist and well blended. Drop dough by rounded measuring tablespoon 2 inches apart, on lightly greased cookie sheets. Bake 8 minutes or until edges are set, sprinkling tops of cookies with chopped crème de menthe thins during last minute of baking. Transfer cookies to wire rack to cool. Makes about 24 cookies.

3. Attach filled cellophane bag and Recipe Card to jar with festive ribbon; add bow, if desired.
