Shaved Brussels Sprouts Caesar Salad

Prep: 20 minutes • Serves: 8

1 pound Brussels sprouts, trimmed and thinly sliced (about 4-1/2 cups)
3 refrigerated hard-cooked eggs, chopped
1/2 cup drained and rinsed low sodium chickpeas
1/2 cup Caesar dressing
1/4 cup thinly sliced red onion
1/4 teaspoon fresh ground black pepper
3 tablespoons grated Parmesan cheese
1 cup whole-grain croutons
6 lemon wedges

1. In large bowl, toss Brussels sprouts, eggs, chickpeas, dressing, onion and pepper. Makes about 8 cups.

2. Serve salad topped with cheese, croutons and lemon wedges.
