Grilled Tofu Tacos with Strawberry-Mango Salsa
Prep: 20 minutes plus standing
Grill: 8 minutes • Serves: 4
tofu, drained
1/4 cup fresh lime juice
2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon ground black pepper
1 mango, peeled, pitted and finely chopped
1 small jalapeño pepper, seeded and finely chopped
1/2 cup finely chopped strawberries
3 tablespoons finely chopped red onion
2 tablespoons chopped fresh cilantro
8 (6-inch) corn tortillas
Nonstick cooking spray
1 small avocado, peeled, pitted and sliced
1. Wrap tofu in paper towels and place on a plate; top with a second plate, weigh down with a heavy object and let stand 15 minutes. In small bowl, stir 3 tablespoons lime juice, cumin, and 3/4 teaspoon each salt and black pepper. Cut tofu lengthwise into 4 (1-inch) planks; brush lime juice mixture over both sides of tofu and let stand 30 minutes.
2. Prepare outdoor grill for direct grilling over medium-high heat. In large bowl, stir mango, jalapeño pepper, strawberries, onion, cilantro, and remaining 1 tablespoon lime juice, and 1/4 teaspoon each salt and black pepper. Makes about 2 cups.
3. Place tofu on hot grill rack; cover and cook 8 minutes or until grill marks appear, turning once. During last 2 minutes of grilling, spray both sides of tortillas with cooking spray; place on hot grill rack, cover and cook 2 minutes or until grill marks appear, turning once.
4. Transfer tofu to cutting board; cut into 3/4-inch strips. Serve tofu in tortillas topped with salsa and avocado.
