Greek Shrimp Skewers with Feta Vinaigrette

Prep: 15 minutes plus soaking
Broil: 6 minutes • Serves: 4

4 (10-inch) wooden skewers
2 tablespoons Bertolli® Dress & Drizz extra virgin olive oil
2 tablespoons crumbled feta cheese
2 tablespoons ReaLemon® 100% lemon juice
1 tablespoon honey
1/4 teaspoon dried oregano
1/2 pound raw 31-40 count peeled and deveined raw shrimp, thawed and tail shells removed, if necessary
8 marinated quartered artichoke hearts
1/2 small red bell pepper, cut into 1-inch pieces
1/2 small zucchini, cut crosswise into 1/2-inch-thick slices
1/4 small red onion, cut into 1-inch pieces
Nonstick cooking spray

1.In wide, shallow dish, soak skewers in water 10 minutes. Place oven rack 5 inches from broiler; preheat broiler to high.

2.In medium bowl, whisk oil, cheese, lemon juice, honey and oregano. Makes about 1/2 cup vinaigrette.

3.Alternately thread shrimp, artichokes, pepper, zucchini and onion onto skewers; place on rimmed baking pan and spray both sides with cooking spray. Broil skewers 6 minutes or until shrimp turns opaque throughout, turning once. Makes 4 skewers.

4.Serve skewers drizzled with vinaigrette.
