


Sweet Corn with Chili-Lime Butter
Prep: 15 minutes
Cook: 4 minutes • Serves: 8
2 teaspoons fresh lime juice
1 teaspoon lime zest plus additional for garnish (optional)
1/2 teaspoon chili powder
1/4 teaspoon ground cayenne pepper
1/4 teaspoon ground cumin
1/8 teaspoon salt
8 medium ears sweet corn, husked
1. Heat large covered saucepot with water to a boil over high heat. In small bowl, stir butter, lime juice, lime zest, chili powder, cayenne pepper, cumin and salt. Makes about 1/4 cup.
2. Add corn to boiling water and cook 4 minutes or until tender; drain.
3. Serve corn brushed with Chili-Lime Butter.
