


Smoky Grilled Salmon with Easy Remoulade
Prep: 15 minutes
Grill: 8 minutes • Serves: 4
1 tablespoon dark brown sugar
1 tablespoon smoked paprika
3/4 teaspoon salt
3/4 teaspoon ground black pepper
4 skinless salmon fillets (about 5 ounces each)
1/3 cup mayonnaise
3 tablespoons sweet relish
1 tablespoon finely chopped fresh dill plus additional for garnish (optional)
1.Prepare outdoor grill for direct grilling over medium-high heat. In small bowl, stir oil, sugar, paprika, and 1/2 teaspoon each salt and pepper. Pat salmon dry with paper towel; rub both sides with oil mixture. Place salmon on hot grill rack; cover and cook 8 minutes or until internal temperature reaches 145°, turning once.
2.In small bowl, stir mayonnaise, relish, dill, and remaining 1/4 teaspoon each salt and pepper. Makes about 1/2 cup.
3.Serve salmon topped with remoulade garnished with dill, if desired.
