Pimento-BLT Sheet-Pan Sliders

12 slices thick-cut bacon
1 package (12 ounces) savory butter rolls, split lengthwise
1/4 cup plus 2 tablespoons pimento cheese
12 (1/4-inch-thick) slices Roma tomatoes
3/4 cup baby arugula
2 tablespoons unsalted butter, melted

1.Adjust 2 oven racks to upper and lower positions; preheat oven to 375°. Line 3 rimmed baking pans with aluminum foil. Place bacon in single layer on 2 prepared pans; bake 25 minutes or until crisp, rotating pans halfway through cooking. Transfer bacon to cutting board; cut slices crosswise into thirds.

2.Spread cut sides of top halves of rolls with cheese. Place bottom halves of rolls, cut side up, on remaining prepared pan; top with bacon, tomatoes, arugula and top halves of rolls, cheese side down. Brush tops of sliders with butter; cover tightly with aluminum foil and bake 10 minutes or until heated through. Makes 12 sliders.
