


Open-Faced Greek Turkey Quesadilla
Prep: 15 minutes
Bake: 8 minutes • Serves: 4
4 (8-inch) whole wheat tortillas
2/3 cup plain hummus
1-3/4 cups leftover or cooked skinless turkey breast meat
1/2 cup drained jarred roasted red peppers
1/3 cup crumbled feta cheese
Chopped cucumber and/or chopped fresh dill for garnish (optional)
1.Adjust 2 oven racks to top and bottom position; preheat oven to 400°. Spray 2 rimmed baking pans with cooking spray; place tortillas in single layer on prepared pans.
2.Spread tortillas with hummus; top with turkey, peppers and cheese. Bake quesadillas 8 minutes or until heated through and tortillas are golden brown, rotating pans between upper and lower racks halfway through baking. Makes 4 quesadillas.
3.Serve quesadillas garnished with cucumber and/or dill, if desired.
