


Honey-Sriracha Chicken Meatballs
Prep: 20 minutes
Roast/Broil: 18 minutes • Serves: 8
1 large egg
1-1/4 pounds 93% lean ground chicken
3 green onions, thinly sliced plus additional for garnish
1/2 cup plus 2 tablespoons panko breadcrumbs
1/8 teaspoon salt
3 tablespoons fresh lime juice
3 tablespoons sriracha
1-1/2 tablespoons honey
1. Position 1 oven rack 4 to 5 inches from broiler; place 1 oven rack in center position. Preheat oven to 400°; spray rimmed baking pan with cooking spray.
2. In large bowl, lightly beat egg; gently mix in chicken, onions, breadcrumbs and salt until just combined. Makes about 2-2/3 cups.
3. Form chicken mixture into 24 (1-inch) meatballs; place 1 inch apart on prepared pan. Roast meatballs on center rack 15 minutes or until internal temperature reaches 165°.
4. In small bowl, whisk lime juice, sriracha, honey and 3 tablespoons water. Makes about 2/3 cup.
5. Preheat broiler to low. Transfer meatballs to 8 x 11-inch baking dish; drizzle with sriracha mixture. Broil meatballs on upper rack 3 minutes or until lightly browned; spoon sauce over meatballs. Makes about 24 meatballs.
