Grilled Italian Sausage & Potato Kabobs

Prep: 20 minutes plus soaking
Grill: 15 minutes • Serves: 4

1 package (12 ounces) all-natural Italian-style smoked chicken sausage, cut crosswise into 1-1/2-inch pieces
2 medium green and/or red bell peppers, cut into 1-inch pieces
1/2 small yellow onion, cut into 1-inch pieces
2/3 (1.5-pound) bag small red creamer potatoes (about 24 potatoes)
Nonstick cooking spray
1 teaspoon Italian medley seasoning blend
1/2 teaspoon salt
1/2 teaspoon ground black pepper

1.Prepare outdoor grill for direct grilling over medium heat. Soak 12 (10-inch) wooden skewers in water 20 minutes.

2.Alternately thread sausage and vegetables onto 8 skewers; thread potatoes onto remaining 4 skewers. Spray kabobs with cooking spray; sprinkle with seasoning blend, salt and pepper.

3.Place kabobs on hot grill rack; cover and cook potato kabobs 15 minutes or until potatoes are easily pierced with a knife, turning once; cook sausage kabobs 10 minutes or until internal temperature of sausage reaches 165°, turning occasionally. Makes 8 sausage kabobs and 4 potato kabobs.
