1/2 cup plain low-fat Greek yogurt
1/4 cup sunflower butter
2 tablespoons honey
1/4 teaspoon ground cinnamon
1/2 (16-ounce) package strawberries
1/2 (8-ounce) package Colby Jack cheese cubes
12 slices deli ham
12 slices deli turkey
6 slices Cheddar cheese, quartered
1 medium orange, red or yellow bell pepper, thinly sliced
1 small Fuji apple, cored and thinly sliced
1 cup baby carrots
1 cup dark chocolate-covered pretzels
1 cup pretzel crackers
1 cup red grapes
1 cup thinly sliced English cucumber
1 cup whole-grain crackers
2/3 cup roasted salted whole cashews and/or roasted unsalted peanuts
1 cup hummus
1.Place eggs in medium saucepan; add enough water to cover and heat to a boil over medium-high heat. Immediately remove saucepan from heat; cover and let stand 15 minutes. Drain immediately, then place eggs in medium bowl filled with ice and cold water; let stand 10 minutes. Peel eggs; cut lengthwise in half.
2.In medium bowl, whisk yogurt, sunflower butter, honey and cinnamon. Makes about 3/4 cup.
3.Arrange strawberries, Colby Jack cheese, ham, turkey, Cheddar cheese, pepper, apple, carrots, chocolate pretzels, pretzel crackers, grapes, cucumber, whole grain crackers, cashews and/or peanuts on large serving platter; serve with hummus and yogurt mixture.
