Cheddar Tuna Melts

Prep: 15 minutes
Broil: 2 minutes • Serves: 4

1/4 cup plus 2 tablespoons mayonnaise
1/2 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 cans (12 ounces each) StarKist® solid white albacore tuna in water, drained
1/4 cup finely chopped red onion
4 slices sourdough bread
2 tablespoons unsalted butter, softened
4 slices sharp Cheddar cheese

1.In large bowl, whisk mayonnaise, lemon juice, salt and pepper; fold in tuna and onion. Makes about 2 cups.

2.Place oven rack about 4 to 5 inches from broiler; preheat broiler to high. Place bread slices on rimmed baking pan; spread tops of slices with butter. Top each slice with 1/4 cup tuna mixture and 1 slice of cheese; broil 2 minutes or until cheese is melted. Makes 4 tuna melts.

3.Cover and refrigerate remaining 1 cup tuna mixture up to 5 days; use in the Tuna Salad-Stuffed Avocados recipe.
