1-1/4 pounds 97% lean ground beef
1 tablespoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
1 can (14.5 ounces) no salt added diced tomatoes with garlic and onion
3 tablespoons balsamic glaze
3 tablespoons chopped fresh basil
1 package (8 ounces) Buffalo mozzarella, thinly sliced
Toasted baguette slices for serving (optional)
1. Place oven rack 6 inches from broiler; preheat broiler to high.
2. In 10-inch, oven-safe skillet, heat oil over medium-high heat. Add beef, oregano, salt and pepper; cook 4 minutes or until no pink remains, breaking up beef with side of spoon. Remove skillet from heat; stir in tomatoes with their juice, and 2 tablespoons each balsamic glaze and basil. Place cheese over beef mixture; transfer skillet to oven and broil 4 minutes or until cheese is golden brown. Makes about 4 cups.
3. Drizzle skillet with remaining 1 tablespoon balsamic glaze and sprinkle with remaining 1 tablespoon basil; serve with toasted baguette, if desired.
