Pumpkin Protein Bites
Prep: 15 minutes plus chilling • Serves: 16

1-1/2 cups pitted dates
1 cup Best Yet® old fashioned oats
1/2 cup canned Best Yet® 100% pure solid pack pumpkin
1/2 cup Best Yet® creamy peanut butter
1/4 cup Best Yet® mini real semi-sweet chocolate chips
1 tablespoon Best Yet® honey
1/2 teaspoon Best Yet® ground cinnamon

1. Line rimmed baking pan with parchment paper. In food processor, pulse dates and oats on high until small crumbs form.

2. In large bowl, stir pumpkin, peanut butter, chocolate chips, honey, cinnamon and date mixture; roll into 1-inch balls and place on prepared pan. Refrigerate 1 hour. Makes about 16 bites.

Chef Tip:
Shape the bites to resemble pumpkins by making small indentations on the top and bottom of each bite, then add a small mint leaf on top for the pumpkin’s stem.

Vampire Bite Chocolate Cups
Prep: 15 minutes plus chilling/cooling
Cook: 10 minutes • Serves: 12

1 cup Best Yet® real semi-sweet chocolate chips
2 teaspoons Best Yet® canola oil
1/2 cup plus 1 tablespoon Best Yet® strawberry preserves

1. Line 12-cup mini muffin pan with mini cupcake liners. In small microwave-safe bowl, heat chocolate chips in microwave oven on high 1 minute or until melted, stirring every 20 seconds; stir in oil. Fill cupcake liners with half the chocolate mixture; refrigerate 30 minutes.

2. In small saucepan, heat preserves and 2 tablespoons water to a simmer over medium heat; reduce heat to low and cook 10 minutes or until thickened, stirring occasionally. Remove from heat; cool completely.

3. Reheat remaining melted chocolate; fill cups with preserves and chocolate. Refrigerate cups 1 hour or until chocolate hardens. Makes 12 cups.

Chef Tip:
If you don’t have a mini muffin pan, stack 3 or 4 mini cupcake liners together, 1 stack for each chocolate cup, on a rimmed baking pan.

Candy Corn Fruit & Yogurt Parfaits
Prep: 15 minutes • Serves: 4

1 medium banana, peeled and chopped
1 cup chopped drained canned Best Yet® pineapple chunks in pineapple juice
1 cup drained Best Yet® mandarin oranges in light syrup
1 cup Best Yet® lowfat vanilla yogurt
Candy corn for garnish (optional)

1. In medium bowl, toss banana and pineapple.

2. In 4 (8-ounce) parfait glasses or jars, layer banana mixture, orange segments and yogurt; garnish with candy corn, if desired.
