Air Fryer Buffalo Mushrooms

Prep: 20 minutes plus standing
Air Fry: 10 minutes • Serves: 8

2-1/2 cups seltzer water
2 cups all-purpose flour
2 teaspoons cornstarch
2 packages (8 ounces each) baby bella mushrooms, stems removed
2 cups panko breadcrumbs
1/4 cup cayenne pepper hot sauce
1/4 cup unsalted butter, melted
1/4 cup sliced green onions
1 cup blue cheese dressing
Carrot sticks and/or celery sticks for serving (optional)

1.In large bowl with lid, whisk water, flour and cornstarch. Add mushrooms; cover and shake. Let stand 20 minutes, shaking twice.

2.Preheat a 3-quart air fryer to 400° for 5 minutes. In large zip-top plastic bag, add breadcrumbs and mushrooms; seal bag, pressing out excess air, and shake to coat mushrooms. In 2 batches, if necessary, air fry mushrooms 10 minutes or until golden brown, turning once.

3.In separate large bowl, whisk hot sauce and butter; add hot mushrooms and toss. Makes about 24 mushrooms.

4.Serve mushrooms sprinkled with onions along with dressing for dipping, and carrots and/or celery, if desired.
