1 tablespoon coconut oil
2 large Granny Smith apples, peeled and chopped
2 tablespoons maple syrup
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon allspice
1-1/3 cups plain nonfat Greek yogurt
1/2 cup plus 2 tablespoons favorite granola
1. In large skillet, toast walnuts over medium-high heat 4 minutes or until lightly browned and fragrant, stirring frequently; transfer to plate to cool.
2. In same large skillet, heat oil over medium heat; add apples and cook 4 minutes or until tender, stirring occasionally. Stir in 1 tablespoon syrup, cinnamon, nutmeg and allspice; cook 2 minutes or until heated through.
3. In 4 (8-ounce) glass jars or glasses, alternately layer apples, yogurt, 1/2 cup granola and walnuts; drizzle with remaining 1 tablespoon syrup and sprinkle with remaining 2 tablespoons granola.
