Wrap each beet in foil; place directly on oven rack and roast 1 hour or until tender. Cool beets completely; remove foil. Carefully peel beets; cut into 1-1\/2-inch pieces.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>2.<\/span>In large bowl, toss kale, chickpeas and 2 tablespoons oil; spread on rimmed baking pan and roast 15 minutes or until golden brown, stirring once.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>3.<\/span>In large bowl, whisk lemon juice, salt, pepper and remaining 1 tablespoon oil; add kale mixture and toss.
