The federal government\u2019s National Cancer Institute reports that foods rich in vitamins A and C have been associated with the reduced risk of certain cancers. Greens are best simply steamed or saut\u00e9ed in a small amount of olive oil for three to four minutes. Season with a little lemon juice, salt and pepper. Or, include them in your favorite dish for added nutrition.<\/p>\n<p><img decoding=\"async\" class=\"ngg-singlepic ngg-none\" src=\"https:\/\/inseasonezine.com\/home\/wp-content\/gallery\/articles\/EatYourGreens1Kale.jpg\" alt=\"Kale\" \/><br \/>\n<strong><em>Kale<\/em><\/strong><br \/>\nThis powerful green has a mild, earthy flavor. Search for smaller leaves as the taste will be sweeter. Rich in beta-carotene, kale has been shown to assist in the fight against cataracts.<\/p>\n<p><img decoding=\"async\" class=\"ngg-singlepic ngg-none\" src=\"https:\/\/inseasonezine.com\/home\/wp-content\/gallery\/articles\/EatYourGreens2ColiardGreens.jpg\" alt=\"Collard Greens\" \/><br \/>\n<strong><em>Collard greens<\/em><\/strong><br \/>\nAlso called collards, they are a common staple in Soul Food cooking.
